The buds and the stems are dried separately. The drying process has to be carefully monitored as it is akin to a curing process, and the quality of the aroma develops during this stage. Produced by steam distillation of seeds from the plant Myristica fragrans Houtt. (Myristicaceae) Nutmeg is an evergreen tree sometimes grows up to 20 meters high with a smooth bark, yellow flowers and pale yellow fruit resembling an apricot but nothing else in common. Inside the fruit is a seed with a brittle seed coat and this seed is the spice nutmeg. Mace is the name given to the vermilion red nut like aril surrounding the seed coat which is contained within the fleshy fruit. The dried mace is also a spice with a characteristic flavor. Separate essential oils are distilled from the spice nutmeg as well as from the mace. Link oil of Nutmeg is processed from nutmeg obtained from hill country regions of Sri Lanka. Distillation is carried out in the clean, hygienic distillation facility and the quality is maintained at highest level.
